Vegan Beef and Broccoli

Ingredients:

  1. 1/2 cups - soy sauce (regular or low sodium)
  2. 1 tablespoons - cornstarch (or flour)
  3. 3 tablespoons - brown sugar
  4. 2 - minced garlic
  5. 2 teaspoons - ginger powder
  6. 1 packages - tempeh
  7. 2 - broccoli crowns
  8. 1 - medium white onion

Directions:

1. Whisk all of the sauce ingredients in a small bowl.

2. Cut tempeh into small bite-size cubes.

3. Cover the tempeh with the sauce and let marinate for 30 min- 1 hour in the fridge.

4. Once the tempeh is ready, chop onions and saute them over medium heat in a large, deep-set pan for 5 minutes. Add tempeh to pan and let simmer for 10 minutes, stirring occasionally.

5. Fill a separate pot halfway with water and bring to boil, then let simmer. Place a coriander full of the broccoli on top of the boiling water. Then cover with lid and let steam for 5 minutes.

6. Stir broccoli into tempeh and onion mixture. Serve over rice and enjoy!
