Vegan Banana Muffins

Ingredients:

  1. 2 tablespoons - flaxseed meal
  2. 5 tablespoons - water
  3. 4 - bananas
  4. 1/2 cups - brown sugar
  5. 1/4 cups - applesauce
  6. 1 teaspoons - vanilla extract
  7. 2 teaspoons - baking soda
  8. 1/2 teaspoons - salt
  9. 1 cups - whole wheat flour
  10. 1 cups - oats
  11. 1/4 cups - walnuts
  12. 1/2 teaspoons - cinnamon

Directions:

1. Preheat oven to 375 degrees F (190 C) and lightly grease a standard size muffin tin (will make 10-11 muffins as original recipe is written // adjust if altering batch size)

2. Prepare flax egg (combine water and flaxseed meal) in a large mixing bowl. Let set for 5 minutes.
3. Add banana and mash, leaving just a bit of texture.
4. Add brown sugar, baking soda, salt, cinnamon and whisk for one minute.
5. Stir in vanilla, applesauce and mix.
6. Add flour and oats and stir with a spoon or spatula until just combined. Lastly, fold in walnuts (optional).
7. Divide batter evenly among muffin tins
8. Bake for 17-22 minutes or until tops are golden brown and a toothpick or knife comes out clean.
