Tzatziki-style Chicken Salad

Ingredients:

  1. 1/2 cups - plain Greek yogurt
  2. 2 tablespoons - mayonnaise
  3. 1/4 cups - lemon juice
  4. 2 teaspoons - honey
  5. 1 cloves - garlic grated on micro-plane
  6. 1 1/2 cups - cooked diced or shredded chicken
  7. 1 - medium cucumber peeled, seeded, sliced into thin half moons
  8. 1 - small red onion peeled, halved, sliced thinly
  9. 2 tablespoons - fresh dill picked and torn
  10. 1 tablespoons - fresh oregano chopped
  11. 1 tablespoons - fresh mint chopped
  12. - salt
  13. - a pinch of chili flakes
  14. - Bibb lettuce `
  15. - sliced tomato

Directions:

Begin in a small bowl by whisking together the first 5 ingredients to make the dressing.

Next, in a bowl large enough to hold it all, combine the chicken, cucumber, onion and herbs. Season this mix with a little salt and a small pinch of chili flakes.

Stir the dressing into the salad and allow this all to hang out refrigerated for at least one hour.

Serve chilled inside lettuce leaves, garnished with tomato slices.
