Twice Baked Potato Casserole

Ingredients:

  1. 6 - medium potatoes baked
  2. 1/2 teaspoons - salt
  3. 1/4 teaspoons - pepper
  4. 1 pounds - bacon cooked and drained
  5. 3 cups - sour cream
  6. 2 cups - shredded mozzarella cheese
  7. 2 cups - shredded cheddar cheese
  8. 2 - green onions chopped

Directions:

Cut peeled potatoes into 1 inch cubes.

Place half in greased 13-x-9-inch baking dish. Sprinkle with half the salt, pepper and bacon.

Top with half the sour cream and cheese. Repeat layers.

Bake, uncovered, at 350 degrees F for 25 minutes.

Sprinkle with onions before serving.

VARIATION:
Mix potatoes, salt and pepper and sour cream together first. Put half in pan, top with cheese, repeat layers and bake.
