Ingredients:
- 1 1/2 cups - cubed eggplant
- 1 - small squash diced
- 1 cups - mushrooms chopped
- 1/2 - onion sliced
- 1 cans - tomatoes 14 oz.
- 1 cups - water or chicken stock made from bouillon cube
- 1 1/2 cups - spinach
- 1 tablespoons - Italian seasoning
- 1 cloves - garlic minced
Directions:
Simmer everything together for about 30 minutes.
If desired, add 1 level tablespoon of grated Parmesan at serving.
