Ingredients:

  1. 1 1/2 cups - cubed eggplant
  2. 1 - small squash diced
  3. 1 cups - mushrooms chopped
  4. 1/2 - onion sliced
  5. 1 cans - tomatoes 14 oz.
  6. 1 cups - water or chicken stock made from bouillon cube
  7. 1 1/2 cups - spinach
  8. 1 tablespoons - Italian seasoning
  9. 1 cloves - garlic minced

Directions:

Simmer everything together for about 30 minutes.

If desired, add 1 level tablespoon of grated Parmesan at serving.
