Tuscan Mariner Gumbo

Ingredients:

  1. 1/2 cups - chopped onion
  2. 1/2 cups - chopped green bell pepper
  3. 3 cloves - garlic finely chopped
  4. 2 tablespoons - olive oil
  5. 2 cans - 14.5 oz. stewed tomatoes
  6. 1 cans - 14.5 oz. chicken broth
  7. 1 cans - 8 oz. tomato sauce
  8. 2 teaspoons - dried basil crushed
  9. 2 teaspoons - dried thyme crushed
  10. 2 teaspoons - paprika
  11. 1 pounds - firm white fish (halibut, red snapper or sea bass) cut into 1 inch pieces
  12. 2 cups - fresh or frozen sliced okra optional
  13. 1/2 pounds - medium shrimp shelled and deveined
  14. - cooked rice for serving with, if desired

Directions:

Cook onion, green pepper and garlic in oil in a large saucepan until tender.

Stir in tomatoes and juice, broth, tomato sauce, basil, thyme and paprika. Bring to a boil.

Reduce heat and simmer 10 minutes. Stir in fresh fish and okra. Cook 5 minutes. Add shrimp. Cook 2 minutes or until pink.

Serve with cooked rice, if desired.
