Ingredients:
- 1/2 cups - chopped onion
- 1/2 cups - chopped green bell pepper
- 3 cloves - garlic finely chopped
- 2 tablespoons - olive oil
- 2 cans - 14.5 oz. stewed tomatoes
- 1 cans - 14.5 oz. chicken broth
- 1 cans - 8 oz. tomato sauce
- 2 teaspoons - dried basil crushed
- 2 teaspoons - dried thyme crushed
- 2 teaspoons - paprika
- 1 pounds - firm white fish (halibut, red snapper or sea bass) cut into 1 inch pieces
- 2 cups - fresh or frozen sliced okra optional
- 1/2 pounds - medium shrimp shelled and deveined
- - cooked rice for serving with, if desired
Directions:
Cook onion, green pepper and garlic in oil in a large saucepan until tender.
Stir in tomatoes and juice, broth, tomato sauce, basil, thyme and paprika. Bring to a boil.
Reduce heat and simmer 10 minutes. Stir in fresh fish and okra. Cook 5 minutes. Add shrimp. Cook 2 minutes or until pink.
Serve with cooked rice, if desired.
