Tuscan Chicken and Beans

Ingredients:

  1. 1 - large onion chopped
  2. 2 cloves - garlic chopped
  3. 3 pounds - skinless, bone-in chicken thighs
  4. 1 1/2 teaspoons - dried Greek seasoning
  5. 1/2 teaspoons - dried thyme
  6. 1/4 teaspoons - black pepper
  7. 2 tablespoons - lemon juice
  8. 1 cans - fire-roasted diced tomatoes 15 oz.
  9. 1 cans - Great Northern beans drained, rinsed, 15 oz.
  10. 1/2 cups - pitted Kalamata olives halved
  11. 1/4 cups - fresh oregano leaves
  12. 3 cups - cooked orzo
  13. - lemon slices for garnish

Directions:

Coat bowl of slow cooker with nonstick cooking spray. Place onion and garlic in bottom of slow cooker. Season chicken on both sides with Greek seasoning, thyme and black pepper; arrange in bottom of slow cooker.

Drizzle lemon juice over chicken and evenly spoon tomatoes and olives on top.

Cover and cook on HIGH for 6 hours or on LOW for 8 hours. During the last 30 minutes of cooking time, stir in the beans.

To serve, stir in oregano and spoon over the cooked orzo. Garnish with lemon slices.
