Turkey Taco Bowl

Ingredients:

  1. 1 packages - cauliflower rice / brown rice
  2. 1 pounds - ground turkey
  3. 2 - peppers (any color)
  4. 1 - onion
  5. 1 cups - lettuce
  6. 1 cups - black beans
  7. 1/4 cups - shredded cheese
  8. 1/4 cups - Greek yogurt
  9. 1/4 cups - salsa
  10. 2 tablespoons - taco seasoning (make your own with paprika, cumin, salt, garlic powder and chili powder)

Directions:

Heat cauliflower rice according to package.

Dice lettuce along with peppers and onions.

In large skillet brown turkey (5 minutes depending on temperature).

Add taco seasoning to skillet with turkey. Sauté for an additional 2 minutes, then set aside.

Sauté peppers and onions in skillet for 5-10 minutes depending on the texture you prefer.

Season with salt and pepper. Strain black beans.

Assemble ingredients and layer with your favorite taco toppings.
