Turkey on the Grill

Ingredients:

  1. 1 - turkey (20 to 25 pounds)
  2. 1/2 pounds - butter softened
  3. 8 sprigs - thyme
  4. 8 - to 10 sage leaves
  5. 6 cloves - garlic minced
  6. 1 - shallot diced
  7. 1 sprigs - rosemary roughly chopped
  8. 1 tablespoons - cracked black pepper
  9. 1/2 tablespoons - kosher salt

Directions:

Start the grill. Bring grill to 500-550 and preheat, with lid closed, for 5 to 10 minutes. Turn down grill; set the temperature to 350 degrees F. Indirect heat.

In a food processor, combine butter with minced garlic, thyme leaves, chopped rosemary, black pepper and kosher salt.

Prep the turkey by separating the skin from the breast, creating a pocket to stuff the butter-herb mixture in. Cover the entire breast with 1/4-inch thickness of butter mixture.

Place any extra herbs in cavity. Season the whole turkey with kosher salt and black pepper.

Place turkey on the grill and smoke for 3-4 hours. Check the internal temperature, the desired temperature is 175 degrees F in the thigh next to the bone, and 160 degrees F in the breast. Turkey will continue to cook once taken off the grill to reach a final temperature of 165 degrees F in the breast.

Cook for 11 to 13 minutes per pound.
