Turkey Chili with Roasted Corn

Ingredients:

  1. 2 pounds - Lean turkey
  2. 1 whole - Red bell pepper Diced
  3. 1 jars - Cookwell & Co. Two Step Chili
  4. 2 ears - Fresh corn
  5. 1 teaspoons - Salt
  6. 1/2 teaspoons - Black pepper

Directions:

1. Preheat oven to 450. Place corn w/ husks on top rack of oven and roast for 25 min., turning them over halfway through. Allow corn to cool, remove husks and, with a sharp knife, shave corn kernels off ears. (NOTE: A can of corn or frozen corn can be substituted.)

2. In a large pot brown turkey meat and crumble. Season meat w/ salt and pepper. Add bell pepper and corn. Cook for two min. and then add Two Step Chili mix. Allow chili to simmer over medium heat for 10 min. and serve hot.
