Turkey Breast with Mustard Sage Crumbs

Ingredients:

  1. 1/2 cups - dry bread crumbs
  2. 1 1/2 teaspoons - dried sage
  3. 1/4 cups - chopped fresh parsley
  4. 3 tablespoons - melted butter
  5. 3/4 teaspoons - salt
  6. 2 pounds - boneless, skinless turkey breast
  7. 1/4 teaspoons - fresh ground black pepper
  8. 1 tablespoons - Dijon mustard

Directions:

Heat oven to 450° F.

In a small bowl combine bread crumbs, sage, parsley, butter and 1/4 teaspoon of the salt.

Season turkey with the remaining salt and the pepper. Place the turkey breast into a roasting pan; brush top and sides of turkey with mustard. Pat bread crumb mixture onto mustard.

Roast turkey for 20 minutes. Lower oven temperature to 375° F and continue roasting until turkey is just done (about 15 to 20 minutes longer).

Transfer turkey to carving board and let rest in a warm spot for 10 minutes. Slice turkey and serve.
