Turkey and Yam Sandwich Spread

Ingredients:

  1. 1 1/4 - Yams Cooked, peeled and diced
  2. 1 1/4 tablespoons - Olive Oil
  3. 2 cups - Ground turkey
  4. 1/3 - Sweet onion Chopped
  5. 1 1/4 cloves - Garlic minced
  6. 4 whole - Jalapeno seeded and minced
  7. 1 2/3 - Chili Powder
  8. 1 1/4 teaspoons - Cajun Seasoning
  9. 1/2 teaspoons - Salt
  10. 2/3 cups - Italian Parsley
  11. 1 1/8 - Tomatillo Salsa

Directions:

Roast Yam at 400 until fork tender, set aside.
Cook turkey over medium heat in olive oil until crumbly and evenly browned (5-7 min) add onion, garlic and jalapeno pepper into turkey mixture, continue cooking until onions caramelize (7-10 min). Season with chili pepper, cumin, Cajun seasoning and salt. Pour tomatillo over mixture, allow all liquid to evaporate, add Italian parsley. Serve!
