Tuna Stuffed Tomato Blossoms

Ingredients:

  1. 1/4 cups - mayonnaise
  2. 1/4 cups - yogurt
  3. 2 tablespoons - pineapple juice
  4. 2 tablespoons - finely chopped onion
  5. 1/4 teaspoons - ground ginger
  6. 7 1/2 ounces - tuna
  7. 1 cups - pineapple chunks
  8. 1/2 cups - chopped walnuts
  9. 4 - large tomatoes
  10. 1/2 teaspoons - kelp
  11. - salad greens

Directions:

In a large bowl combine mayonnaise, yogurt, pineapple juice, onion and ginger.

Stir in the tuna, pineapple chunks and walnuts. Chill.

Place the tomatoes, stem end down. Cut each tomato almost to the stem, making 5 or 6 sections. Spread apart slightly. Sprinkle with kelp.

Fill with tuna mixture. Arrange on salad greens. Garnish with parsley or watercress, if desired.
