Tuna Salad

Ingredients:

  1. 3 ounces - water-packed tuna
  2. 2 stalks - celery chopped
  3. 4 whole - green olives chopped
  4. 1 teaspoons - mayonnaise or 1 T reduced-fat mayonnaise
  5. 1 tablespoons - rice vinegar if desired
  6. 2 cups - mixed dark greens
  7. 1 tablespoons - almonds chopped
  8. 1 ounces - 100% whole grain crackers

Directions:

Mix 3 oz water-packed tuna with 2 stalks chopped celery, 4 chopped green olives, and 1 tsp regular (or1 T reduced-fat mayonnaise). Add 1 Tbsp seasoned rice vinegar, if desired. Scoop tuna onto 2 c mixed dark greens, and top with 1 Tbsp chopped almonds. Serve with 1 oz 100 percent whole grain crackers.
