Tower of Salmon en Tartare

Ingredients:

  1. 6 ounces - Salmon fillets chopped
  2. 2 teaspoons - sashimi dressing or lemon juice
  3. 3 tablespoons - chives chopped
  4. - salt
  5. - pepper
  6. 1 - ripe avocado pitted, peeled, diced
  7. 2 tablespoons - lemon juice
  8. - salt
  9. - pepper
  10. 1 - ripe mango pitted, peeled, diced
  11. 1 tablespoons - fresh coriander
  12. - salt
  13. - pepper
  14. 2 - plum tomatoes seeded and chopped
  15. 1 tablespoons - fresh coriander chopped
  16. - salt
  17. - pepper
  18. 6 ounces - Salmon fillets chopped
  19. 2 teaspoons - sashimi dressing or lemon juice

  23. 1 - ripe avocado pitted, peeled, diced
  24. 2 tablespoons - lemon juice
  25. - salt
  26. - pepper
  27. 1 - ripe mango pitted, peeled, diced
  28. 1 tablespoons - fresh coriander
  29. - salt
  30. - pepper
  31. 2 - plum tomatoes seeded and chopped
  32. 1 tablespoons - fresh coriander chopped
  33. - salt
  34. - pepper

Directions:

1. Using a 3" round cookie cutter, build a tower in the center of the dinner plate by packing first a 1/4 of the avocado mixture into the ring, then a 1/4 each of the mango, tomato and salmon mixtures.
2. Pack gently and remove the ring.
3. Garnish with salad greens.
4. Towers can be made a few hours in advance, keep them refrigerated and loosely covered.
