Ingredients:
- 6 ounces - Salmon fillets chopped
- 2 teaspoons - sashimi dressing or lemon juice
- 3 tablespoons - chives chopped

- 1 - ripe avocado pitted, peeled, diced
- 2 tablespoons - lemon juice
- - salt
- - pepper
- 1 - ripe mango pitted, peeled, diced
- 1 tablespoons - fresh coriander
- - salt
- - pepper
- 2 - plum tomatoes seeded and chopped
- 1 tablespoons - fresh coriander chopped
- - salt
- - pepper
- 6 ounces - Salmon fillets chopped
- 2 teaspoons - sashimi dressing or lemon juice
- 3 tablespoons - chives chopped
- - salt
- - pepper
- 1 - ripe avocado pitted, peeled, diced
- 2 tablespoons - lemon juice

- 1 - ripe mango pitted, peeled, diced
- 1 tablespoons - fresh coriander

- 1 tablespoons - fresh coriander chopped

Directions:
1. Using a 3" round cookie cutter, build a tower in the center of the dinner plate by packing first a 1/4 of the avocado mixture into the ring, then a 1/4 each of the mango, tomato and salmon mixtures.
2. Pack gently and remove the ring.
3. Garnish with salad greens.
4. Towers can be made a few hours in advance, keep them refrigerated and loosely covered.
