Tortilla Egg Muffins

  1. 3 - colored peppers and onion chopped finely
  2. - cooked bacon in bite size pieces
  3. 7 - eggs
  4. - cream for mixing with eggs
  5. - salt and pepper OR Montreal steak spice
  6. 4 - flour tortillas (10-inch) quartered
  7. - lots of Tex-Mex or strong cheddar cheese grated


Beat eggs and cream together. Season with salt and pepper or Montreal steak spice.
Stir in peppers, onions and bacon.

Form quartered flour tortillas into cups in muffin tins. Fill cups about 2/3 full with egg mixture.

Top with lots of grated cheese. Bake in 350 degree F oven, checking after 15 minutes, and baking until done.
