Tortilla Casserole

Ingredients:

  1. 1 pounds - Chicken thighs or breasts Season, pre-cook, roughly chop
  2. 1 cans - Rotel do not drain
  3. 1 cans - Cream of Chicken Soup do not add water
  4. 1 packages - Flour Tortillas soft taco or burrito size
  5. 1 - onion chop
  6. 16 ounces - Shredded Mexican Blend Cheese
  7. - Sour Cream Optional
  8. 1 pounds - Chicken thighs or breasts Season, pre-cook, roughly chop
  9. 1 cans - Rotel do not drain
  10. 1 cans - Cream of Chicken Soup do not add water
  11. 1 packages - Flour Tortillas soft taco or burrito size
  12. 1 - onion chop
  13. 16 ounces - Shredded Mexican Blend Cheese
  14. - Sour Cream Optional

Directions:

Chop onion and chicken and mix with undrained Rotel and cream of chicken soup. In a 9x13 baking dish, layer like lasagna starting with tortillas (simply tear to make them cover the bottom), then 1/3 of the chicken mixture, then shredded cheese. Repeat twice more, ending with cheese. Bake at 350 for 30-40 minutes or until cheese is melty.
