Tomato Salsa

Ingredients:

  1. 1/2 - White onion finely diced
  2. 1/4 cups - Fresh Lime Juice
  3. 1 1/2 pounds - Tomatoes
  4. 3 - Jalapenoes seeded, finely diced
  5. 1 - Anaheim Chili seeded, finely diced
  6. 2 tablespoons - Cilantro chopped
  7. 1 cloves - Garlic crushed
  8. - Salt
  9. - Pepper
  10. - Cayenne

Directions:

In small bowl, combine white onion and lime juice; let stand 10 minutes.

Torch skins of tomatoes with kitchen torch. Let cool, then peel and dice. Put in separate bowl; stir in the jalapenos, Anaheim chili, cilantro and garlic. Stir in onion mixture. Season with salt, black pepper and cayenne.
