Tomato Pasta Soup

Ingredients:

  1. 1 cups - minced celery
  2. 1 cups - minced carrot
  3. 1 cups - minced onion
  4. 2 tablespoons - extra virgin olive oil
  5. 4 cups - vegetable broth
  6. 15 ounces - canned tomato puree
  7. 2 cups - ditalini pasta
  8. - salt and pepper
  9. 1/2 cups - grated Parmesan cheese

Directions:

In a large pot, cook veggies in the olive oil until tender.

Add broth and tomato puree; bring to a boil.

Add pasta and cook until al dente; season with salt and pepper.

Serve sprinkled with Parmesan cheese.
