Ingredients:
- 1 cups - minced celery
- 1 cups - minced carrot
- 1 cups - minced onion
- 2 tablespoons - extra virgin olive oil
- 4 cups - vegetable broth
- 15 ounces - canned tomato puree
- 2 cups - ditalini pasta
- - salt and pepper
- 1/2 cups - grated Parmesan cheese
Directions:
In a large pot, cook veggies in the olive oil until tender.
Add broth and tomato puree; bring to a boil.
Add pasta and cook until al dente; season with salt and pepper.
Serve sprinkled with Parmesan cheese.
