Ingredients:
- 4 - Scallions sliced thin
- 1 pounds - Cherry or Grape Tomatoes halved
- pinchs - Salt
- 2 tablespoons - Toasted sesame oil divided
- 3 cloves - Garlic finely grated
- 1 1/2 teaspoons - Ginger finely grated
- 2 1/2 cups - Cooked Rice chilled
- 3 - Large eggs beaten
- 1 tablespoons - Soy sauce
- 1/2 - Lemon
- 4 - Scallions sliced thin
- 1 pounds - Cherry or Grape Tomatoes halved
- pinchs - Salt
- 2 tablespoons - Toasted sesame oil divided
- 3 cloves - Garlic finely grated
- 1 1/2 teaspoons - Ginger finely grated
- 2 1/2 cups - Cooked Rice chilled
- 3 - Large eggs beaten
- 1 tablespoons - Soy sauce
- 1/2 - Lemon
Directions:
Heat 1 Tbsp oil over medium heat
Add green onion and 3/4 of tomatoes and cook until softened (4 minutes)
Mix in garlic and ginger and cook (30 seconds)
Add rice and stir to separate grains and cook to heat through (3 minutes)
Move mixture to one side of pan then add remaining oil
Add eggs and cook until just set (1 minute)
Mix into vegetables and rice
Add soy sauce and cook until well combined (1 minute)
Transfer rice to platter and add remaining 1/4 tomatoes on top
Grate zest from lemon on top
