Tomato Fried Rice

Ingredients:

  1. 4 - Scallions sliced thin
  2. 1 pounds - Cherry or Grape Tomatoes halved
  3. pinchs - Salt
  4. 2 tablespoons - Toasted sesame oil divided
  5. 3 cloves - Garlic finely grated
  6. 1 1/2 teaspoons - Ginger finely grated
  7. 2 1/2 cups - Cooked Rice chilled
  8. 3 - Large eggs beaten
  9. 1 tablespoons - Soy sauce
  10. 1/2 - Lemon
  11. 4 - Scallions sliced thin
  12. 1 pounds - Cherry or Grape Tomatoes halved

  14. 2 tablespoons - Toasted sesame oil divided
  15. 3 cloves - Garlic finely grated
  16. 1 1/2 teaspoons - Ginger finely grated
  17. 2 1/2 cups - Cooked Rice chilled
  18. 3 - Large eggs beaten
  19. 1 tablespoons - Soy sauce
  20. 1/2 - Lemon

Directions:

Heat 1 Tbsp oil over medium heat
Add green onion and 3/4 of tomatoes and cook until softened (4 minutes)
Mix in garlic and ginger and cook (30 seconds)
Add rice and stir to separate grains and cook to heat through (3 minutes)
Move mixture to one side of pan then add remaining oil
Add eggs and cook until just set (1 minute)
Mix into vegetables and rice
Add soy sauce and cook until well combined (1 minute)
Transfer rice to platter and add remaining 1/4 tomatoes on top
Grate zest from lemon on top
