Tomato, Avocado & Corn Relish

Ingredients:

  1. 1 tablespoons - (or more) Fresh lime juice, to taste
  2. 1/2 cups - Red onion Finely chopped
  3. 1/4 cans - Fresh cilantro leaves Chopped
  4. - Salt, to taste
  5. - Pepper, to taste
  6. 1 pints - Cherry or grape tomatoes Quartered
  7. 2 cups - Fresh or frozen corn kernels Thawed, if frozen
  8. 1 whole - Large (or 2 sm.) avocados Diced
  9. 2 tablespoons - Extra virgin olive oil

Directions:

1. Quarter cherry tomatoes & place in lrg. bowl. Add corn. Peel and dice avocados. Add to veggies in bowl.

2. Add oil & lime juice, according to taste; toss gently to coat. Season w/ salt & pepper. Set aside briefly (or refrigerate) to allow flavors to mingle.

3. Meanwhile, chop onion & cilantro; stir gently into avocado mixture.

Serve chilled or at room temperature.
