Ingredients:

  1. 3 cups - fresh blackberries or other summer berries
  2. 1 tablespoons - fresh lemon juice
  3. 2 teaspoons - sugar
  4. 1 - large egg
  5. 1 cups - sugar
  6. 1 cups - flour
  7. 6 tablespoons - melted butter

Directions:

Preheat oven or toaster oven to 375 degrees F.

Toss the blueberries, lemon juice and teaspoons of sugar together to coat blueberries. Divide berries evenly among 6 lightly greased (8 ounce) ramekins.

In another bowl, stir together egg, sugar, flour and melted butter until just combined. Divide mixture evenly over fruit, gently pressing the mixture to mostly cover the berries.

Place ramekins on a baking sheet (possibly in batches if you're using a small toaster oven). Bake in preheated oven for 30-35 minutes until golden and bubbly.
