Ingredients:
- 2 - tilapia fillets - skinless, boneless thawed
- 2 - corn tortillas
- 1 tablespoons - butter
- 1/2 teaspoons - Cajun, Fajita, OR blackening seasoning
- 1 - avocado thinly sliced
- 1/2 cups - mixed greens or slaw with shredded carrots
- 1/4 cups - queso fresco (or favorite shredded cheese)
- 1 - lemon - for squeezing over fish
- - hot sauce as desired, for topping
Directions:
Season tilapia fillets on one side.
Heat skillet over medium-high heat and melt butter in it; place tilapia fillets into skillet, seasoned side down, and sprinkle seasoning on top side. Allow to cook about 3 minutes, then flip over, and cook about 3-4 minutes on other side until cooked through.
In clean skillet (or after wiping out previous skillet and setting fish aside), place corn tortillas over medium heat, flipping after one minute on each side, to heat through.
Split up tilapia fillets into smaller pieces and place on corn tortillas, topping with slaw, queso fresco, avocado slices, and a squeeze of lemon (along with any other hot sauce or toppings you prefer).
