Ingredients:

  1. 3 bags - posole (frozen or dried)
  2. 3 packages - onion soup mix
  3. 4 pounds - pork finely cubed
  4. 1/2 jars - minced garlic
  5. 5 cans - green chili enchilada sauce
  6. - warm tortillas for serving with

Directions:

Soak the posole overnight in a large stainless steel pot.

Add the onion soup and cook together until tender.

Fry pork in bacon fat in large pot until brown; add garlic and green chili enchilada sauce. Simmer for 1 hour until meat is tender.

Then add soup/posole mixture to pork mixture.

Serve hot with warm tortillas.
