    This recipe was given to me many years ago by a dear friend, Gayle Hale. It has been a family favorite and is a perfect side dish to brisket! It is a great way to use leftover baked potatoes.

Ingredients:

  1. 4 - baking potatoes
  2. 6 - scallions finely chopped
  3. 1 sticks - butter melted
  4. 2 cups - shredded cheddar cheese
  5. 1 cups - sour cream

Directions:

Clean potatoes, rub with olive oil, wrap in aluminum foil and bake at 400 degrees for 45 minutes. Let cool.

Grate baked potatoes into a bowl (peeling is optional). Add butter, sour cream, 3/4 of the scallions, and all but 1/4 cup of the cheese. Mix well and place in a greased 9-x-13-inch baking dish.

Top with the remaining scallions and shredded cheese. Bake at 350 degrees F for 20 minutes.
