Theresa's Mock Toffee

Ingredients:

  1. 40 - saltine crackers
  2. 2 sticks - butter
  3. 1 cups - brown sugar
  4. 1 packages - 12 oz. chocolate chips
  5. 1 cups - chopped pecans or nuts of your choice

Directions:

Preheat oven to 350° F. Line a cookie sheet / jelly roll pan with foil and spray with Pam.
Spread crackers in a single layer.

Melt the butter and stir in the sugar. Bring mixture to a foaming boil, stirring constantly. Pour mixture over the crackers until they are all covered.

Bake for 10 minutes. Take out and pour the chocolate chips over the top and spread with a spatula until crackers are covered and all the chips are melted. Sprinkle the nuts on and mash with a fork so they will set in the chocolate.

Let cool and refrigerate. Once cooled, break into pieces and enjoy. You won't believe they are saltines!
