The Very Best Cheese Pie

Ingredients:

  1. 18 - graham crackers (1-1/2 cups crushed) rolled to crumbs
  2. 1/4 cups - sugar
  3. 5 tablespoons - melted butter or margarine
  4. 2 packages - 8 oz. cream cheese softened at room temperature
  5. 2 - eggs
  6. 1/4 cups - sugar
  7. 1 teaspoons - vanilla
  8. 1 cups - sour cream
  9. 1/4 cups - sugar
  10. 1 teaspoons - vanilla

  14. 2 packages - 8 oz. cream cheese softened at room temperature
  15. 2 - eggs
  16. 1/4 cups - sugar
  17. 1 teaspoons - vanilla
  18. 1 cups - sour cream
  19. 1/4 cups - sugar
  20. 1 teaspoons - vanilla

Directions:

Preheat oven to 375° F.

Mix crust ingredients together and pat firmly into bottom and 1/3 of the way up the sides of a 9-inch springform pan.

Beat filling ingredients with a rotary beater or electric mixer until satiny and pour into crust. Bake for 20 minutes. Remove from oven and let cool 15 minutes.

Meanwhile, raise oven temperature to 475° F. Blend topping ingredients and spread gently over cheese filling.

Return pie to oven and bake 10 minutes longer. Cool in pan to room temperature, then cover with foil and chill for 10 to 12 hours before serving.

Cut into slim wedges. About 430 calories per serving.
