THE SOUTHERN BELLY BISCUIT

Ingredients:

  1. 1 cups - shredded cheddar
  2. 1 cups - shredded havarti
  3. 6 tablespoons - cream cheese
  4. 4 tablespoons - mayonnaise
  5. 3 tablespoons - dill pickle juice
  6. 1/2 tablespoons - Tabasco sauce
  7. 6 tablespoons - bread-and-butter pickles minced
  8. 1/2 teaspoons - cayenne pepper
  9. 1/4 cups - pimentos minced
  10. - Salt and freshly ground black pepper
  11. 3 - egg yolks
  12. 2 teaspoons - Dijon mustard
  13. 1 1/2 teaspoons - fresh garlic minced
  14. 1/2 cups - extra-virgin olive oil
  15. 1/2 cups - peanut oil
  16. 2 teaspoons - fresh lemon juice
  17. 1/4 teaspoons - salt
  18. 1 pinchs - cayenne pepper
  19. 1/2 teaspoons - Tabasco sauce
  20. - Salt and freshly ground black pepper
  21. 4 - biscuits See Buttermilk Biscuit recipe
  22. 12 slices - crisp bacon
  23. 4 slices - thick tomato slices

Directions:

1. Make pimento cheese: Combine cheeses, mayonnaise, pickle juice and Tabasco in food processor and pulse until combined. Stir in remaining ingredients, then season to taste with salt and pepper.

2. Make spicy aioli: In a bowl, whisk together yolks, mustard and garlic. Whisking vigorously, slowly pour in oils until fully incorporated. Stir in remaining ingredients and season to taste with salt and pepper.

3.Cut biscuits in half. Spread bottom halves with pimento cheese. Place all biscuit halves in a toaster oven or under the broiler and lightly toast. Spread spicy aioli on top halves, then top pimento cheese with bacon and tomato slices. Close sandwiches.
