The Best Chicken Tortilla Soup

Ingredients:

  1. 1 cans - chicken broth
  2. 1 cans - tomato sauce
  3. 1 cans - diced tomatoes
  4. 3 cups - shredded cooked chicken
  5. 2 - anaheim chilies
  6. 1 - jalapeno pepper
  7. 1/2 cups - diced onion
  8. 4 - large tomatoes
  9. 2 cloves - garlic
  10. 2 tablespoons - minced cilantro
  11. 1 tablespoons - chili powder
  12. 2 teaspoons - cumin
  13. 2 teaspoons - pepper
  14. 1 teaspoons - salt
  15. 2 teaspoons - tabasco sauce
  16. 1/2 teaspoons - chipotle pepper
  17. 1 cups - cheddar cheese
  18. 1 - avocado
  19. 1/4 cups - cilantro
  20. 1 - lime
  21. 2 cups - tortilla chips

Directions:

Throw everything except the garnishes into the crockpot and let it cook on high for 5-6 hours.
Dress with garnishes and give it a squeeze of lime (a must!) and you're good to go.
If not using a crockpot, saute the garlic and onion in 2 tablespoons of olive oil before adding the remaining soup ingredients; simmer for at least an hour to allow flavors to mix together well before serving.
