Notes:
If using fresh corn, you will need about 7 ears of corn, shucked and kernels cut from the ears. Optional: Use 3 cans of corn with red and green peppers in place of fresh peppers.

Ingredients:
- 2 cans - 15 oz. corn drained
- 1 - small red bell pepper diced
- 1 - small green bell pepper diced
- 1/4 cups - water
- 2 tablespoons - butter
- 1 teaspoons - salt
- 1 teaspoons - sugar
- 8 ounces - cream cheese softened
- 1/2 cups - half and half
- 2 tablespoons - flour
- 1/4 teaspoons - smoked paprika
- 1/2 teaspoons - chili powder
- 2 tablespoons - Parmesan cheese
Directions:
Heat the water and butter in a pot. Once it starts steaming, add the corn and diced bell peppers. Cook for 6 minutes, stirring frequently.
Add all of the remaining ingredients (except Parmesan), and stir to combine. Once the cream cheese has melted, pour into a lightly greased casserole dish.
Top with the Parmesan cheese and bake at 375 degrees F for 15 minutes. (To make a day or two ahead, prepare the recipe up to this point and then bake it just prior to serving).
