Thanksgiving Corn

Ingredients:

  1. 2 cans - 15 oz. corn drained
  2. 1 - small red bell pepper diced
  3. 1 - small green bell pepper diced
  4. 1/4 cups - water
  5. 2 tablespoons - butter
  6. 1 teaspoons - salt
  7. 1 teaspoons - sugar
  8. 8 ounces - cream cheese softened
  9. 1/2 cups - half and half
  10. 2 tablespoons - flour
  11. 1/4 teaspoons - smoked paprika
  12. 1/2 teaspoons - chili powder
  13. 2 tablespoons - Parmesan cheese

Directions:

Heat the water and butter in a pot. Once it starts steaming, add the corn and diced bell peppers. Cook for 6 minutes, stirring frequently.

Add all of the remaining ingredients (except Parmesan), and stir to combine. Once the cream cheese has melted, pour into a lightly greased casserole dish.

Top with the Parmesan cheese and bake at 375 degrees F for 15 minutes. (To make a day or two ahead, prepare the recipe up to this point and then bake it just prior to serving).
