Thai'd Down Mocktail

Ingredients:

  1. 1 1/2 ounces - unsweetened coconut water
  2. 1/2 ounces - strong ginger syrup
  3. 1/2 ounces - pineapple gum syrup
  4. 1/2 ounces - lime juice
  5. 2 dashes - Angostura bitters
  6. 1 leaves - basil torn in half
  7. 3 leaves - mint
  8. - crushed ice
  9. - chilled soda water
  10. - lime wedge optional, for garnish

Directions:

Combine coconut water, syrups, lime juice, bitters, basil and mint leaves in a cocktail shaker with ice.

Shake until tin is well frosted and very cold, about 20 seconds. Strain into a Collins glass over crushed ice.

Top with chilled soda water; garnish with a lime wedge.
