Ingredients:
- 2 tablespoons - butter
- 2 pounds - potatoes finely diced (skins left on)
- 1/2 - onion diced
- 1 - red bell pepper chopped
- 1 - or 2 jalapenos (OR 1 bell pepper) seeded, diced
- - salt and pepper
- 2 teaspoons - taco seasoning
- - chopped green onions optional, for garnish
Directions:
Place diced potatoes, onions, bell pepper and jalapenos into a large bowl and season well with taco seasoning, salt and pepper.
Over medium heat in a large skillet, melt butter. Toss in the seasoned diced vegetables and cook until potatoes are fork-tender and other vegetables have softened.
Sprinkle with a few chopped green onions for garnish just before serving.
