Ingredients:
- 2 tablespoons - chili powder
- 1/4 teaspoons - cayenne pepper optional
- 2 tablespoons - kosher salt
- 1 tablespoons - garlic powder
- 1 tablespoons - onion powder
- 2 tablespoons - cracked black pepper
- 2 tablespoons - brown sugar
- 2 teaspoons - dry mustard
- 4 pounds - beef brisket, trimmed
- 2 - whole bay leaves
- 1 1/2 cups - beef stock
- 1 tablespoons - Liquid Smoke optional
Directions:
1. Preheat oven to 350° F.
2. Make the dry rub by combining all dry rub ingredients in a small bowl. Season the raw brisket on both sides with the rub.
3. Place in a roasting pan and roast, uncovered, for 1 hour at 350 degrees F.
4. Add beef stock, liquid smoke, and whole bay leaves to the roasting pan. Reduce oven heat to 300° F, cover pan tightly, and continue cooking for 3 to 4 hours or until fork-tender.
5. Trim the fat and slice meat thinly across the grain. Top with juice from the pan. Serve with BBQ sauce.
