Texas/Czech Kolaches

Ingredients:

  1. 1/2 cups - warm water
  2. 1 packages - active dry yeast (1/4 oz packet)
  3. 4 teaspoons - sugar
  4. - dash of salt
  5. 4 tablespoons - butter room temp
  6. 1 - egg yolk
  7. 3 1/2 cups - flour
  8. 3/4 cups - warm milk
  9. 6 ounces - cream cheese, softened
  10. 1/4 teaspoons - lemon juice
  11. 3 tablespoons - sugar
  12. 1 - egg yolk
  13. 1 tablespoons - butter, melted
  14. 1/4 cups - flour
  15. 1/4 cups - sugar
  16. 1/2 cups - warm water

  21. 1 - egg yolk
  22. 3 1/2 cups - flour
  23. 3/4 cups - warm milk
  24. 6 ounces - cream cheese, softened
  25. 1/4 teaspoons - lemon juice
  26. 3 tablespoons - sugar
  27. 1 - egg yolk
  28. 1 tablespoons - butter, melted
  29. 1/4 cups - flour
  30. 1/4 cups - sugar

Directions:

1. Combine water, yeast, and 1 tsp sugar. Let sit for 5 minutes until activated.
2. Beat butter and remaining 3 tbsp sugar together. Add the egg yolk and salt. Then, add yeast mixture, flour & milk. Combine and knead until no longer really sticky.** I use a dough hook and let it go until it comes away from the sides of the bowl but not longer than that.
3. Grease a bowl and add the dough. Cover and let rise in a warm place until it’s doubled in size (36-55 minutes). Do not touch until it’s doubled in size.
4. Line a 9x13 dish with parchment and grease the sides.
5. Divide dough into 16 pieces. *I like to make them balls (sts) and put them in the pan in 4 x 4 lines. Brush with melted butter, cover and let rise again for 36 minutes.
6. Preheat oven to 375°F. Prepare filling & crumble (see below).
7. When the Kolaches dough has risen, I take my middle and index fingers on both hands and press them into the middle of the dough and move my fingers out until the dough has a sort of rectangle shape indented for the filling. The “hole” should be about 3/4” deep (sts).
8. Fill each kolache with a heaping tablespoon of your filling choice (my favorite is the cream cheese filling or blueberry jam. My kids like strawberry jam). If you choose to fill with jam, place a large dollop of cream cheese filling on top of the jam.
9. Sprinkle crumble heavily over the Kolaches and bake at 375°F for 25-36 minutes or until slightly golden.

*For Cream Cheese Filling - combine all ingredients together until smooth

**For Crumble Topping - Combine until incorporated and crumbly
