Ingredients:
- - black-eyed peas cooked, drained, rinsed
- - jalapenos roasted, and skin removed
- - tomatoes chopped
- - green peppers chopped
- - yellow onion chopped
- - Garlic cloves minced
- - fresh cilantro
- - fresh lime juice
- - salt and pepper
Directions:
Jalapenos - after roasting, put in a baggie to sweat them. This process makes it easier to take the skin off. Don't rinse the charred peppers under water; all your flavor will go with it.
Chop the peppers along with all the other ingredients and add to peas. Sprinkle with salt and pepper; pour lime juice over.
