Texas Caviar Salsa

Ingredients:

  1. - black-eyed peas cooked, drained, rinsed
  2. - jalapenos roasted, and skin removed
  3. - tomatoes chopped
  4. - green peppers chopped
  5. - yellow onion chopped
  6. - Garlic cloves minced
  7. - fresh cilantro
  8. - fresh lime juice
  9. - salt and pepper

Directions:

Jalapenos - after roasting, put in a baggie to sweat them. This process makes it easier to take the skin off. Don't rinse the charred peppers under water; all your flavor will go with it.

Chop the peppers along with all the other ingredients and add to peas. Sprinkle with salt and pepper; pour lime juice over.
