Ingredients:

  1. 1 - yellow bell pepper
  2. 1 - orange bell pepper
  3. 1 - red bell pepper
  4. 2 - jalapeno peppers
  5. 1 cans - 15 oz. black-eyed peas
  6. 1 cans - 15 oz. black beans
  7. 1 cans - 11 oz. white shoepeg corn
  8. 1 bottles - 16 oz. Italian salad dressing
  9. 4 - roma tomatoes
  10. 1 bunches - cilantro

Directions:

Remove membranes and seeds from peppers. Dice peppers and place in a large plastic bowl (jalapenos should be finely chopped).

Drain and rinse the black-eyed peas, black beans, and shoepeg corn; add to the peppers.

Add Italian dressing and stir well. Cover and marinate in fridge for 8 hours. Drain.

Dice roma tomatoes and cilantro and stir into mixture. Serve with tortilla chips.
