Texas Beef Chili

    This hearty beef chili features boneless chuck roast and a medley of traditional chili seasonings. Serve with homemade cornbread for a complete meal.

    4 pounds boneless chuck roast, cut into 1/2-inch pieces   (( any cut of good beef will work/ also pork )) 2 tablespoons chili powder (( they are not all created equal !!  )) 2 (6-ounce) cans tomato paste 1 (32-ounce) container beef broth 2 (8-ounce) cans tomato sauce. (( real Mex chili uses only chile pepper But not always easy to find!! ))  2 teaspoons granulated garlic. (( I use fresh cut fine. )) 1 teaspoon salt 1 teaspoon ground oregano (( use just a scant amount ... Very pungent )) 1 teaspoon ground cumin (( main flavor  ingredient  )) 1 teaspoon paprika 1 teaspoon onion powder (( fresh onions are better! )) 1/2 teaspoon ground black pepper 1/4 teaspoon ground red pepper Cornbread sticks (optional) crushed tortilla chips, sour cream, shredded cheese, chopped onion $

    If you've had spices longer than a year, it might be time to replace them. Seasonings tend to dull in flavor the longer they sit on the shelf. Always store them in a cool, dry place. !  I use a variety of fresh peppers & boil them first ... Remove seeds & core !

  2. 2 tablespoons - chili powder they are not all created equal !!
  3. 12 ounces - tomato paste 2 (6-ounce) cans
  4. 32 ounces - beef broth 2 (8-ounce) cans
  5. 16 ounces - tomato sauce real Mex chili uses only chile pepper But not always easy to find!!
  6. 2 teaspoons - granulated garlic I use Costco California
  7. 1 teaspoons - sea salt
  8. 1 teaspoons - oregano ground use just a scant amount ... Very pungent
  9. 1 teaspoons - cumin ground main flavor  ingredient
  10. 1 teaspoons - paprika smoked
  11. 1 teaspoons - onion flakes
  12. 1/2 teaspoons - black pepper ground preferred pepper melody
  13. 1/4 teaspoons - Chipotle Chili pepper Chipotle or hot red
  14. - Cornbread sticks (optional) Serve with:
  15. - tortilla chips Toppings crushed
  16. - sour cream Toppings or Greek Yogurt
  17. - Mexican shredded 4 cheeses Toppings or cheadder
  18. - onion sweet Toppings chopped

Directions:

Preparation:

Brown meat, in batches, in a Dutch oven over medium-high heat. Remove meat, reserving drippings in Dutch oven. Add chili powder to Dutch oven; cook, stirring constantly, 2 minutes. Stir in tomato paste; cook 5 minutes.
Return beef to Dutch oven. Stir in beef broth and next 9 ingredients; bring to a boil. Reduce heat to low, and simmer, uncovered, stirring occasionally, 1 1/2 hours or until beef is tender. Serve with cornbread sticks, if desired, and desired toppings.
