Tequila-Chiotle Shrimp

Ingredients:

  1. 2 tablespoons - oil
  2. 1/2 cups - Red Onion chopped
  3. 1 - Chipotle minced
  4. 15 ounces - diced tomatoes
  5. 1 pounds - shrimp shelled/deveined
  6. 1/4 cups - fresh pineapple diced
  7. 1 tablespoons - tequila
  8. 1 tablespoons - cilantro chopped

Directions:

In Large Skillet heat 2 tbsp. oil moderately high heat
- Add red onion and chipotle
- Add tomatoes and season with Salt and pepper
- Nestle in shrimp and cook 5 minutes, turn once
- Stir in pineapple and tequila
- Top with cilantro and serve
