Ingredients:
- - extra-virgin olive oil for greasing
- 1 1/2 pounds - ground beef chuck
- 1 1/2 cups - cooked quinoa
- 3/4 cups - finely grated Parmigiano-Reggiano cheese plus more for garnish
- 2 - large eggs lightly beaten
- 1/2 cups - finely chopped flat-leaf parsley plus more for garnish
- 1 cloves - garlic minced
- 1 3/4 teaspoons - kosher salt
- 3/4 teaspoons - freshly ground pepper
- 1 1/2 cups - jarred marinara sauce
Directions:
Preheat oven to 400° F and grease a large baking dish with olive oil.
In a large bowl, using your hands, gently mix together all of the remaining ingredients except the marinara sauce. Form the ground-beef mixture into twelve 2-1/2-inch meatballs.
Arrange meatballs in baking dish and roast for 20 to 25 minutes, until just cooked through. Spoon the marinara sauce on top and bake until sauce is hot, about 5 minutes.
Garnish with grated cheese and chopped parsley and serve.
