Tangy Carrot Salad

Ingredients:

  1. 2 pounds - Carrots sliced
  2. 1 - Onion diced
  3. 1 - Green Pepper diced
  4. 8 ounces - Tomato Sauce
  5. 2 tablespoons - Olive Oil
  6. 1/3 cups - Vinegar
  7. 1/2 teaspoons - Sea Salt
  8. 1/2 teaspoons - Black Pepper
  9. 1/2 teaspoons - Dry Mustard
  10. 1/3 cups - Sugar Optional

Directions:

Slice and steam the carrots for 8 to 10 minutes being cautious not to overcook. Drain them and place in a bowl, add diced onion and green pepper. Bring the tomato sauce, olive oil, vinegar sugar, salt, pepper, and dry mustard to a boil. Turn the heat down and allow to reduce a bit then remove from heat and pour over the carrot mixture. Stir and chill before serving.
