You can add other veggies like zuchinni or peppers to the salad mix. You could also add cooked beans or lentils.

Ingredients:
- 2 tablespoons - Braggs Liquid Amino
- 1/2 teaspoons - Black Pepper Ground
- 3 cloves - Garlic Minced
- 1 tablespoons - Olive Oil
- 1/2 cups - Lemon Juice Freshly squeezed
- 3/4 cups - Quinoa red, Black, or White
- 1 bunches - Parsley A large bunch!
- 1 bunches - Green Onion A large bunch!
- 1/4 cups - Fresh Mint Packed and Chopped fine
- - Tomatoes 1 or 2 chopped small
- 2 - Cucumbers One finely chopped and one chopped small like the tomatoes
- 1 1/2 cups - water
Directions:
Begin by cooking quinoa in the water. This takes about 20 minutes. When quinoa is done transfer to a large bowl an alow it to cool. Mince your garlic. In a small bowl combine minced garlic, olive oil, lemon juice, braggs liquid aminos and black pepper. Set aside. Add parsley, green onions, mint and the finely diced cucumber to the quinoa. Mix well then pour dressing over all. Mix well again and refrigerate covered for 2 or more hours. Just before serving add the chopped tomato and the second cucumber (the one that was chopped small - not finely diced). Stir well to combine and serve as is or over chopped greens.
