Sweet Potatoes on Pineapple

Ingredients:

  1. 4 - sweet potatoes
  2. - brown sugar to taste
  3. 2 tablespoons - butter
  4. - apple pie spice or pumpkin pie spice to taste
  5. - cinnamon
  6. - chopped pecans optional
  7. 4 slices - pineapple

Directions:

Microwave the sweet potatoes (in skin) 'til done, turning over at least once.

When potatoes are done, make a slit in top of potato and scoop out the potato meat into a bowl. Smooth potatoes using a spoon and then add brown sugar, butter, spices, cinnamon and pecans, to your taste.

Lightly grease bottom of oblong casserole dish and and place pineapple slices on bottom of dish. With a spoon, place a large scoop of potato mixture on top of each pineapple slice.

Bake at 325 degrees F for 10 minutes.
