Sweet potatoes are another of our favorites. This dish is wonderful in spring, summer and fall. We like it at room temperature.

Ingredients:
- 3 pounds - young sweet potatoes
- 1 bunches - green onions sliced thinly
- 1 bunches - fresh mint cut into chiffonade
- 3 tablespoons - red wine vinegar
- 1/2 cups - olive oil
- 1 teaspoons - Dijon mustard
- 1 cloves - garlic minced
- 3/4 teaspoons - pepper
Directions:
Cut sweet potatoes into quarters, place in sauce pan, cover with water and bring to boil. Lower heat; cover and simmer 15-20 minutes or until cooked through. Drain and set aside to cool.
Remove skin and cut potatoes into bite-size pieces. Place in a bowl along with onions and mint.
Combine remaining ingredients in a jar with a tight-fitting lid and shake well. Pour dressing over the potatoes; toss gently. May rest an hour or so.
