    Sweet potatoes are another of our favorites. This dish is wonderful in spring, summer and fall. We like it at room temperature.

Ingredients:

  1. 3 pounds - young sweet potatoes
  2. 1 bunches - green onions sliced thinly
  3. 1 bunches - fresh mint cut into chiffonade
  4. 3 tablespoons - red wine vinegar
  5. 1/2 cups - olive oil
  6. 1 teaspoons - Dijon mustard
  7. 1 cloves - garlic minced
  8. 3/4 teaspoons - pepper

Directions:

Cut sweet potatoes into quarters, place in sauce pan, cover with water and bring to boil. Lower heat; cover and simmer 15-20 minutes or until cooked through. Drain and set aside to cool.

Remove skin and cut potatoes into bite-size pieces. Place in a bowl along with onions and mint.

Combine remaining ingredients in a jar with a tight-fitting lid and shake well. Pour dressing over the potatoes; toss gently. May rest an hour or so.
