Sweet Potato Soufflé

Ingredients:

  1. 3 cups - Sweet potatoes Mashed
  2. 1/2 teaspoons - Salt
  3. 1 cups - White sugar
  4. 2 - Eggs Beaten
  5. 1/3 cups - Butter Softened
  6. 1/2 cups - Sweetened condensed milk
  7. 1/2 cups - Brown sugar For topping
  8. 1/3 cups - Butter Softened butter for topping
  9. 1 cups - Pecans Chopped

Directions:

Beat sweet potatoes, salt, sugar, eggs, butter and sweetened condensed milk with electric mixer until fluffy. Put in a buttered or baking sprayed 9 x 9 casserole dish. Mix topping of brown sugar, butter, pecans and sprinkle over potato mixture. Bake at 350 degrees Fahrenheit for about 35 minutes. Do not overcook. Let set for at least 10 minutes before serving.
