Ingredients:
- 5 cups - Sweet potatoes (about 4 potatoes) Peeled & chopped
- 1 1/2 cups - Sugar
- 1 1/2 sticks - Margarine Divided use
- 1 cans - 12-oz. Evaporated milk
- 2 whole - Eggs
- 1/2 teaspoons - Nutmeg
- 1 teaspoons - Cinnamon
- 1 teaspoons - Vanilla
- 1 cups - Cornflakes (For topping) Crushed
- 1/2 cups - Brown sugar (For topping)
- 1/2 cups - Pecans (For topping)
Directions:
1. Heat oven to 400.
2. Boil sweet potatoes in enough water to cover until soft. Drain water. Add sugar, 3/4 stick margarine, evaporated milk, eggs, nutmeg, cinnamon and vanilla to potatoes and mash w/ mixer or by hand until smooth.
3. Put in 9 X 13-in. baking dish and put on bottom rack of oven. Bake for 20-25 min. Remove casserole from oven and add Topping. Bake for 20-25 min. more.
FOR TOPPING:
In pan, combine cornflakes, 3/4 stick margarine, brown sugar and pecans. Saute until nuts are very lightly toasted.
