Sweet Potato Muffins

Ingredients:

  1. 1/2 cups - butter softened
  2. 1 cups - packed brown sugar
  3. 1 1/2 whole - Sweet potatoes mashed, cooked
  4. 2 whole - eggs
  5. 1 teaspoons - Cinnamon
  6. 1 teaspoons - Vanilla Extract

Directions:

1. In a bowl and using electric mixer, cream butter, brown sugar together until fluffy. Beat in sweet potatoes and eggs.

2. In a separate bowl sift together flours, pumpkin pie, spice and baking soda. Mix half into sweet potato mixture. Add only enough milk to thin batter. Add remaining dry ingrediants. Add enough of the milk to make very thick batter.

3. butter and flour muffin pan or use liners. Fill muffin cups two thirds full. Bake in a pre-heated 375 oven until dry on top and fork comes out clean, 15 to 22 minutes. Let cool, wrap individually, freeze.
