Sweet Potato Cheesecake

Ingredients:

  1. 2 1/2 cups - finely crushed vanilla wafers (55 cookies)
  2. 1/2 cups - melted butter or margarine
  3. 2 - medium sweet potatoes cooked, peeled & cooled
  4. 16 ounces - cream cheese
  5. 2/3 cups - sugar
  6. 2 - eggs
  7. 2 cups - sour cream
  8. 1/4 cups - orange juice
  9. 1 teaspoons - cinnamon

Directions:

Mix crumbs and butter and press mixture over bottom and 2 inches up the sides of a 8" springform pan. Chill 1 hour. Puree potatoes and set aside. Beat cream cheese and sugar until fluffy. Beat in eggs until just combined. Blind in rest of ingredients. Pour into crust. Bake at 350 for 55-60 minutes or until set. Cool and then chill thoroughly before serving.
