You can prepare ahead and store in refrigerator, but when ready to cook, either let it sit to room temperature before baking or add a little time to the cook time.

Ingredients:
- 6 - medium sweet potatoes peel, boil & mash
- 1 sticks - butter or margarine
- 1 cups - sugar
- 2/3 cups - milk may need more
- 2 - eggs
- 1 teaspoons - vanilla
- 1/3 cups - butter or margarine
- 1 cups - brown sugar
- 1/2 cups - flour
- 1 cups - chopped pecans
Directions:
Filling: Peel, boil, drain and mash potatoes. Put into mixing bowl and add butter, sugar, eggs, milk and vanilla. Mix on low speed until creamy. Pour into large casserole dish (the wider the dish, the more topping to filling ratio - yum)
Topping: Combine butter, flour and sugar and mash with fork until crumbly (do not overdo it). Add chopped pecans. Sprinkle over mashed sweet potato mixture.
Bake at 350 for 30-40 minutes (until hot and topping has desired brown-ness).
