Ingredients:
- 3 cups - Sweet Potatoes 4 Cups Cooked
- 1 cups - Sugar
- 1/2 teaspoons - Salt
- 2 - Eggs
- 1/3 sticks - Butter 2 tbl & 2 tsp
- 1/2 cups - Evaporated Milk
- 1 teaspoons - Vanilla
- 1 cups - Brown Sugar
- 1 cups - Pecans Chopped
- 1 cups - Shredded Coconut
- 1 sticks - Butter Melted
- 1/3 cups - All Purpose Flour
Directions:
Preheat oven to 400 degrees.
Mix together mashed sweet potatoes with sugar, salt, eggs, butter, evaporated milk & vanilla.
Mix topping in a separate bowl. Brown sugar, pecans, coconut, butter & flour.
Place in greased casserole dish and bake 20-30 minutes. Cover with topping & bake another 10 minutes until bubbling.
