Sweet Potato Casserole

Ingredients:

  1. 3 cups - cooked mashed sweet potatoes
  2. 1 cups - sugar
  3. 2 - eggs
  4. 1/4 cups - milk
  5. 1 tablespoons - vanilla
  6. 1/2 cups - butter 1/2 cup = 1 stick
  7. - pinch of salt
  8. 1 cups - brown sugar
  9. 1/2 cups - flour
  10. 1/2 cups - butter 1/2 cup = 1 stick
  11. 1/2 cups - chopped pecans
  12. - shredded coconut

Directions:

Mix together sweet potatoes, sugar, eggs, milk, vanilla, butter and salt. Place in a casserole dish.

Mix together topping ingredients: brown sugar, flour, pecans, coconut and butter; spread over top of potatoes.

Bake at 375 degrees F for 45 minutes or until topping begins to brown.
